Who loves smoothies? I know I do. A gorgeous Mexican mango was the inspiration for a flavorful, antioxidant-rich smoothie in my kitchen this week. In celebration of that particularly sunny shade of pink-orange-yellow found in mangoes, carrots, and citrus fruits, I whipped up a sweet, fruity, vegan, gluten-free smoothie, spiked with a bite of spicy ginger. This Mango Carrot Ginger Smoothie is packed with vitamin C, vitamin A, and carotenoid compounds found in yellow-orange fruits and vegetables, which are linked to heart health.
I used a cara cara orange, which is a gorgeous coral shade and oh so sweet!I picked up these baby carrots at the farmers market. Don’t waste your time peeling carrots, enjoy all of that fiber and nutrition going on in the plant’s outer surface.
