There are hundreds of different ways to make vegan tacos, but these are a firm favourite in our household. Not only are they perfect for a quick, weeknight meal but they taste delicious whilst still being healthy.
Choosing the right ingredients
We use corn tortillas for a base (either white or blue corn) and pop them in the oven to warm them slightly before serving. We like the firmer texture of these tortillas because they hold all the sauces and ingredients without disintegrating.
When it comes to filling, if we’re feeling indulgent we’ll buy air fried tofu as the star of the show. It’s very easy to prepare – all you need to do is pop them in a frying pan (no oil required) and heat them up for around 5 minutes, tossing them regularly.
If you’re after a healthier alternative, you can sub the air fried tofu for oven-cooked tofu or even something like jackfruit.
Step by step instructions
Put the tortillas in the oven to warm ready for serving.
Using a dry frying pan, gently fry the air-fried tofu for around 5 minutes. If you are using oven-cooked tofu or jackfruit then adjust this cooking time accordingly.
While the tortillas are warming up and the tofu is cooking in the pan, prep the vegetables. You can have any combination you like, but typically we prep radish, avocado, sweetcorn and red cabbage.
If you’d prefer to make a vegan slaw, combine sliced carrots and red cabbage with the following sauce (adjust to your own preferences):
If you enjoy your slaw chilled, put it in the refrigerator for around 15-30 minutes prior to serving.
Once everything is prepared, bring it to the table and enjoy assembling it in a variety of combinations.
We love to add dollops of salsa verde, vegan mayo or hot sauce to our vegan tacos to finish. You could also sprinkle diced coriander on the top as a final flourish.
